Earthy Mushroom and Spinach Pasta

This is an extremely simple week night dinner recipe. Double the ingredients to make enough for 2 people. And I guarantee you will still have room for dessert later ;) without feeling guilty.


Ingredients (Dinner for 1):
1. ½ cup button mushrooms, sliced
2. ¼ large steak tomato, diced
3. ¼ large sweet yellow onion, thinly sliced
4. 1 cup chopped raw spinach
5. 1 cup cooked pasta (Penne or fusilli will do)
6. 2 cloves garlic, mashed
7. pinch of chili flakes
8. ½ teaspoon dried thyme
9. ½ teaspoon ground coriander
10. ½ teaspoon onion powder
11. Pinch of salt and pepper

Method:
1. Cook pasta in a pot of salted water until almost al dente.
2. While pasta is cooking, mash garlic. First, finely minced garlic. Then add salt as an abrasive and use one flat side of your chopping knife to mash garlic.
3. Add mashed garlic to a medium/high heated saucepan with ¼ cup of water and sauté for about 2 minutes.
4. Add sliced onions, seasoned with salt and pepper and sauté covered until softened and translucent. Takes about 3-4 minutes.
5. Add diced tomatoes, onion powder, dried thyme, chili flakes and ground coriander and stir to mix well. Add about 4 tablespoons of water and cook covered for another 2-3 minutes.
6. Add sliced mushrooms and cooked covered for another 8-10 minutes until mushrooms soften. At the 5 minute mark, add another 4 tablespoons of water.
7. Add chopped spinach and sprinkle with a little salt on top and sauté covered for another 2-3 minutes.
8. The pasta should be done by now. Add pasta into pan and add about ¼ cup of the pasta water. Stir to mix well and cook covered for another 3-4 minutes.
9. Turn off heat and ready to serve.
