Rich Fudgy Chocolate Squares

Trust me...these are "wicked"! They are so yummy and chocolaty that once again, you will never have guessed that there's no butter and refined sugar in them! Feel free to indulge and feel good at the same time! Try this sugarfree recipe and let me know if you like it!


Ingredients (makes about 30 pieces of 1-inch cubes):
1. 1 large banana, mashed
2. 4 ounces unsweetened pure chocolate
3. 2 eggs + 2 tablespoon egg white, beaten
4. 1 cup honey or maple syrup
5. ½ cup spelt flour
6. ¼ cup wheat bran (if you are allergic to wheat, use spelt flour)
7. Pinch of salt
9. 1 cup hazelnuts and macadamia nuts, toasted and roughly crushed

Method:
1. Preheat oven to 375F or 190.5C.
2. Line 8 by 8 inch baking pan with parchment paper.
3. Mix flour, wheat bran (if using) and salt in a mixing bowl. Whisk to combine completely.
4. Melt chocolate in a bowl over hot water.
5. Add mashed banana into melted chocolate and mix well until smooth. It is ok that the mixture becomes thick and becomes paste-like. Remove from heat and allow to cool slightly.
6. Add honey/maple syrup into chocolate mixture.
7. Using an electric beater, beat to completely mix mixture. Then add in beaten eggs and continue to beat.
8. Then using a large spoon, fold in flour mixture.
9. Then fold in nuts.
10. Pour mixture into baking pan and bake in oven for about 30 minutes.
11. Then switch oven to broil and bake for another 10 minutes.
12. "Brownies" are ready when the top looks crisp.

Note:
It is important that you allow the chocolate mixture to cool slightly before mixing in the eggs because if the mixture is too hot, you will get scrambled eggs!

I just tried making this recipe again today using oat flour and it works perfectly! The texture turns out to be slightly fluffier and softer than spelt flour. Wonderful!!

This recipe makes about 10 servings of 3 cubes per serving. Each serving is about 210 calories with high amounts of manganese and iron (17%*).
