Lemon Chives Fettucine with Prawns

This is a quick and easy switch-up from the Lemon Chives Fettucine with Salmon. For variety, replace salmon with pan-seared prawns for a change.


Ingredients for shrimp:
1. 5 to 6 pieces of large shrimp
2. Salt and pepper
3. 1 clove garlic, mashed
4. A few tablespoons of water

Ingredients for noodles:
1. 2 slices of lemon
2. Zest from 1 lemon
3. 1 handful of chives, chopped
4. ¼ cup organic vegetable stock
5. 1 handful of cooked fettucine

Method:
1. In a ziploc bag, place prawns, salt, pepper and mashed garlic, seal bag and mix well.
2. Allow prawns to marinated for about 15 to 20 mins. If possible, it would be even better if you marinate them overnight or in the morning before you leave for work.
3. When you are ready to pan-sear the prawns, heat a few tablespoons of water in a saucepan.
4. Place prawns into saucepan and sear for about a minute or so on each side.
5. Once the prawns turn pink, they are ready to be served.

Note:
Do not over-cook prawns. They get rubbery and chewy.
