Spicy Roasted Garlic with Lemon and Parsley Pasta

I know.....it's a long title. But I really didn't want to come up with a fancy name that disguises the goodness of these lovely ingredients! There isn't a lead "actor" (i.e. lead ingredient) here. The garlic, lemon and parsley all play equal roles in setting this dish up for an oscars nomination! ;)

Garlic contains tons of anti-cancer properties and is excellent in managing high cholestrol levels. If you are having a hard time finding ways to include the superfood Garlic into your diet, this dish is a must try!


Ingredients (makes 1 main dish serving or 2 side servings):
1. 6 cloves garlic
2. Zest from 1 lemon
3. 2 tablespoon parsley, minced
4. 3/4 cup dry pasta, cooked to al dente
5. 1 tablespoon olive oil
6. Sea salt to taste
7. 1/4 teaspoon chili powder
8. Pinch of ground black pepper
9. 1/4 teaspoon chili flakes (optional)

Method:
1. Preheat oven to 375F.
2. Peel garlic cloves and place on to a sheet of aluminum foil, large enough to form a closed pouch. Season with chili powder, salt, pepper and chili flakes (if using). Fold aluminum foil into a pouch and bake in oven for 15 minutes.
3. In the meantime, bring a pot of water to boil to cook the pasta.
4. Once the garlic is ready, remove from foil and place into a mixing bowl. Add 1/4 tablespoon of olive oil and mash the garlic.
5. Add hot drained cooked pasta and mix well with roasted garlic mixture.
6. Add lemon zest and parsley and rest of olive oil and mix well.
7. Season with salt and chili flakes to taste if desired.
8. Ready to serve!
