Ingredients (Dinner for 1):1. 1 cup pasta, cooked almost to al dente
2. 1/4 onion, thinly sliced
3. 1/2 cup shittake mushrooms (or your favorite mushrooms), sliced
4. 1/2 tomato, diced
5. 1/2 can canned tuna (in water)
6. 2 teaspoon curry powder
7. 1/2 teaspoon ground cumin
8. 1/2 teaspoon ground turmeric
9. 1/2 teaspoon onion powder
10. 1/2 teaspoon chili powder
11. Salt and pepper to taste
Method:
1. In a saucepan, saute onions in 1/4 cup water until tender or translucent.
2. Add diced tomatoes and mushrooms, season with a pinch of salt and cook covered for 2 minutes.
3. Add tuna, curry powder, ground cumin, ground turmeric, chili powder and onion powder. Add 1/4 cup water, stir to mix well and cook covered for 5 minutes.
4. Add pasta and cook covered for another 3 to 4 minutes.
5. Add salt and pepper to taste. Stir fry to mix well.
6. Serve hot!
