Peppermint and Apple Pops

A little treat while I catch the oscars tomorrow night. :) These sweet little pops are very Asian because they are made with agar agar powder. For those of you in the Americas, you should be able to get agar agar powder from your local Chinatown. Agar agar powder is a substance derived from the red algae and functions like gelatin for vegetarians. Agar agar is approximately 80% fiber and therefore is sometimes used as a intestinal regulator. Agar agar is very versatile as a structure provider in Asian desserts because it is colorless and flavorless, providing a clean canvas for one's culinary imagination.

These pops are super simple to make. So try them with these flavors or switch them up with your favorites!


Ingredients for Apple Pops (makes ~ 10-14 pops depending on size of mold):
1. 3g agar agar powder
2. 20g maple sugar crystals or 2 tablespoon maple syrup
3. 250g water (about 1.5 cup)
4. 50g pure apple juice

Ingredients for Peppermint Pops (makes ~ 10-14 pops depending on size of mold):
1. 3g agar agar powder
2. 25g maple sugar crystals
3. 300g water (about 2 cups)
4. 1 peppermint tea bag
5. 1/2 teaspoon mint or pepperming extract

Method:
1. In a small pot, mix the first 3 ingredients for the apple pops. Put pot on stove and bring to a boil, stirring constantly.
2. Once the mixture has come to a boil, turn of heat and stir in apple juice.
3. Pour mixture into mold and allow to set either at room temperature or in the fridge. Takes just a few minutes
4. Wash up pot and mix the first 4 ingredients for the peppermint pops. Put pot on stove and bring to a boil, stirring constantly.
5. Once the mixture has come to a boil, allow the tea bag to continue to steep while stirring in mint extract.
6. Pour mixture into mold and allow to set either at room temperature or in the fridge.
