Curry Pasta

How about an Indian style quick pasta dinner for a week night to satisfy your sudden craving for curry? This is a super easy dish that's both flavorful and colorful!


Ingredients (dinner for 1):
1. 1 cup cooked fusilli
2. 1 cup spinach, chopped rather finely
3. 1 medium tomato, diced
4. 2 cloves garlic, minced
5. 1/2 teaspoon ground cumin
6. 1/2 teaspoon ground turmeric
7. 1/2 teaspoon ground coriander
8. 1 teaspoon curry powder
9. 1 Bay leaf
10. Sea salt and pepper

Method:
1. In a medium saucepan, heat up 1/4 cup of water and saute garlic and bay leaf for about 1 minute.
2. Add diced tomatoes and saute covered for about 3 to 4 minutes.
3. Add ground cumin, curry powder, coriander and turmeric. Stir well to combine.
4. Then add spinach and season with salt and pepper and cooked covered for 2 to 3 minutes.
5. Add cooked pasta. Stir well and cooked for another 4 to 5 minutes.
